Cesar Sepulveda

Cesar Sepulveda is an M.S. student at Texas Tech University focus on Meat Science and Muscle Biology and his plan is to continue with his Ph.D. He describes himself as a scientist with experience in the animal and food industry. Some of the areas on his list of skills include: animal science, meat science, dairy science, meat and dairy byproducts, experimental design, statistical analysis, databases development, and experience in SAS programming language.

 

Consulting ​for the development of experimental designs, planning of experiments execution, and data analysis are the main areas in which Cesar plays a key role in research project teams. He has participated in projects that evaluated effects of different feeding programs over animal performance (conversion, daily gain, carcass quality). Evaluation of different treatment to live animal or primal cuts over consumer quality trails (tenderness, juiciness, and flavor). Evaluation of extenders over quality in meat and dairy byproducts.

He also holds an MS in Food Science and Technology from the National University of Colombia in 2012 and his Bachelor in Animal Science from the same University in 2004.

Prior to starting his current position as a Research Assistant in the Animal and Food Sciences department at Texas Tech University, Cesar worked as a part time lecturer in the undergraduate program in Food Science in the University of Antioquia and as rural extensionist in Colombia.

Cesar also worked for several years in animal production, packing plants, byproduct plants, and retail red meat markets. 

​​

Now his research involves part of all the scientific areas in which he has been working, evaluating the use of a standardized methodology for assessing meat quality and animal performance.
